Ingredients
2 cups rolled oats
¼ cup pumpkin seeds
¼ cup flax seeds
¼ cup hemp hearts
½ cup shredded coconut
1 tsp salt
1 tsp cinnamon
½ cup vegetable oil
½ cup honey
Instructions
Preheat the oven to 350°F with the rack in the middle position.
In a large bowl, combine the oats, pumpkin seeds, flax seeds, hemp hearts, coconut, salt, and cinnamon. Add the vegetable oil and honey, and stir until everything is evenly coated.
Spread the mixture in an even layer on a large rimmed baking sheet. Bake for 10 minutes, then stir and return to the oven for another 10 minutes.
Immediately transfer the granola to a separate rimmed baking sheet to cool. If using dried fruit, add it now. Let cool completely, about 1 hour.
Store in an airtight container at room temperature for up to 1 month.
